Greening Operations Series: Food Services Waste Prevention and Composting

Discuss strategies to minimize and reduce food waste, save money and run a greener foodservice operation. The session will address reduction, reuse, and recycling/composting alternatives for food waste in a healthcare foodservice setting.

Objectives

Participants will understand the connection between sustainability and waste management
Participants will review the importance of waste management, environmentally and economically
Participants will understand the waste management hierarchy: reduce, reuse, recycle
Participants will be able to identify major strategies and tactics within each area (reduce/reuse/recycle) that may be employed in their operation to reduce costs and enhance sustainability

    Andrew Shakman is President & CEO of LeanPath, Inc., a technology company providing food waste tracking tools to the foodservice and hospitality industry. LeanPath’s core offering, the ValuWaste® System, enables managers to reduce food waste, save food dollars and operate more sustainable facilities.

    Previously, was President & CEO of Nine Dots, an technology firm serving food clients including Nestle, Quaker Oats, Dole Food Company and Molson Canada.

    Andrew holds a B.A. from Stanford University and an M.F.A from the University of Southern California.

    Andrew speaks regularly at foodservice conferences including the ASHFSA, National Restaurant Association, Society for Foodservice Management, HFM, and the Foodservice Consultants Society International.

    Ms. Prata is the Manager of Special Projects for the Division of Support Services at NewYork-Presbyterian Hospital. She received her BA from Colgate University. Ms. Prata works directly with the Division of Support Services’ Vice President, who is also the Executive Sponsor of the NewYork-Presbyterian Hospital’s first-ever Sustainability Program. Jessica maintains responsibility within various programs that related to the Hospital’s environment of care program, including emergency management and patient safety education. She is actively involved as a key member of the team responsible for developing the organization’s first-ever Sustainability Council, a group of senior level managers and leaders that will drive “green” initiatives and programming across its five campuses. Jessica is intimately involved in both planning and implementing the recycling and composting programs across these sites, and has assisted in some of the staff training. Jessica is an active member of ASHE, and plans to participate in various upcoming conferences that focus on sustainability in healthcare. She will also attend PracticeGreenHealth’s sustainability training in San Antonio slated for January 2009.

    seven years and lives in Brooklyn, NY.”
